Samosas are a popular snack in South Asian cuisine. Here is a recipe to make samosas at home: tag Ingredients: - 2 cups all-purpose flour - 1/2 tsp salt - 1/4 tsp ajwain seeds (carom seeds) - 1/3 cup vegetable oil - 1/2 cup water - 2 medium potatoes, boiled and mashed - 1 cup green peas, boiled and mashed - 1 tsp cumin seeds - 1 tsp coriander powder - 1 tsp garam masala - 1/2 tsp red chili powder - Salt to taste - Oil for frying Instructions: 1. In a mixing bowl, combine the flour, salt, and ajwain seeds. Add the vegetable oil and mix until the mixture resembles coarse crumbs. 2. Add the water gradually and knead the dough until it becomes smooth and pliable. Cover the dough with a damp cloth and let it rest for 30 minutes. 3. In a separate pan, heat some oil and add the cumin seeds. Once they begin to splutter, add the mashed potatoes, green peas, coriander powder, garam masala, red chili powder, and salt. Mix well and cook for 2-3 minutes. Remove from heat and let it cool. 4. Roll the dough into small balls and flatten them into a round shape. Cut the round in half to form two semi-circles. 5. Take one semi-circle and form a cone by bringing the two straight edges together, overlapping them slightly, and pressing them together. Fill the cone with the potato-peas mixture, leaving some space at the top. 6. Wet the top edge of the cone with water and press it together to seal the samosa. Repeat with the remaining dough and filling. 7. Heat oil in a deep frying pan over medium heat. Once the oil is hot, add the samosas to the pan, a few at a time, and fry until golden brown on both sides. 8. Remove the samosas from the oil and place them on a paper towel to remove excess oil. Your homemade samosas are now ready to be served with tamarind or mint chutney!
